Kale Pesto Pasta

Kale is a great source of vitamin C, protein and fiber. I used baby kale for this recipe, it's much softer than curly kale.

Pro tip: double or triple the recipe and keep on hand for other meals. Pesto goes great with fish, shrimp, chicken and steak.

INGREDIENTS


Pesto Sauce (makes 1/2 cup of pesto sauce)

  • 1 and 1/2 cups baby kale

  • 1/2 cup basil

  • 2 garlic cloves

  • 1/4 cup pine nuts

  • 1/2 cup olive oil

  • 1/4 teaspoon of salt

Pasta

  • Pick your favorite type of pasta, 1 cup (sea shells are nice because they hold some of the pesto in the shell)

  • 1/2 cup cherry tomatoes

  • 1/2 cup baby kale

  • drizzle of olive oil

DIRECTIONS

  1. Combine pesto ingredients in a blender and blend till smooth

  2. Taste, add more salt if needed, set aside

  3. Boil water and cook pasta as directed on the package, once complete set aside

  4. Saute kale and cherry tomatoes in olive oil, about 5 minutes

  5. Mix desired amount of pesto on pasta and garnish with the cherry tomatoes and cooked kale

  6. Optional: add shrimp or chicken
