It's officially fall and I love to make hearty meals in one pot. You could also do this in a crock pot.
Ingredients
1 med yellow onion
4 garlic cloves diced
1 pound ground turkey
2 tablespoon cumin
2 tablespoon coriander
1-2 jalapeños (one for garnish, and one diced seeds removed)
2 cups of baby kale
2 cans (15 oz) cannellini beans
2 cups chicken broth
dash of salt and pepper
Garnish Options
fresh cilantro and jalapeños
tortilla chips or cashews
shredded parmesan cheese
Directions
Saute onions and garlic, add turkey and spices 5-7 mins
Add one diced seeds removed jalapeño
Add kale and saute 2-3 minutes
Add beans and chicken broth, simmer 20 mins (stir occasionally)
Taste, add more seasoning if you desire
Garnish
Add a few jalapeños and cilantro. For crunch you can add a few broken tortilla chips or even cashews
